<p>Do you know why there is a parsley leaf in the middle of every plate? Chef Matt Kantor of  <a href="http://littlekitchen.ca/" target="_blank">Little Kitchen</a> shared this trick with me. It works best with a bigger leaf like basil, but that night parsley was the only fresh herb still available.</p>
<p>The role of the leaf is to make sure the bowl stays in place on the plate while you bring the dish from the kitchen to the table.</p>
<p>I took these pictures at Alexa Clark&#8217;s tasting menu birthday. <h4>1. Mise en place</h4>
<p>The &#8220;<a href="http://www.marthastewart.com/photogallery/our-top-40-good-things?lpgStart=1&amp;currentslide=1&amp;currentChapter=1" target="_blank">mise en place</a>&#8221; is the first cooking lesson that my mother taught me. I still do it today. If you prepare all the ingredients – meaning cutting, slicing, measuring – before starting to cook your meal, you simplify the tasks ahead. You will be able to adjust to unforeseen events and be free to experiment with the recipe as you cook it.</p>
<h4>2. No-Waste Dressing</h4>
<p>I still make my vinaigrette with a whisk and a bowl. Hard habits do not go easily. But each time, I watched Michael Smith on Chef at Home, he reminds me how simple shaking your vinaigrette in a closed jar can be.</p>
<p>This tip takes it further. My French background means that I am partial to the classic Dijon mustard, red vinegar with olive oil dressing. It is responsible to find a good use of your almost empty Dijon mustard jar. <h4>3. The Garlic Trick</h4>

<p>I always use a garlic crusher at home because of the smell on my hands. But to get rid of the garlic smell, simply rub your hand on the interior of your stainless steel sink. It sounds crazy but it works.</p>
<p>On Martha, they suggest we sprinkle a pinch of kosher salt and a drop of olive oil over the cloves before chopping. The salt acts as an abrasive which helps to pulverize the garlic, and the oil lets it slide off the blade. <h4>4.  Olive Oil to the rescue of Pesto</h4>
<p>I learned this trick from <a href="http://www.barefootcontessa.com/" target="_blank">Ina Garten</a> many years ago. Pour a thin layer of olive oil on top before putting the airtight lid on the container. <p>Today, it feels like Spring in Montreal. I am thinking about summer drinks to serve on a terrace. Here are a few tips to cheer up water and cocktails. Drop berries, herbs, strips of citrus zest and ginger bits before you add water to your ice cube trays. It cannot be simpler than that.</p>
<h4>Adding Tonic Water to your Ice Cubes</h4>
<p>I like to serve for the aperitif a glass of Portonic. It is a refreshing long drink made with dry white Port, tonic water, ice, garnished with either a slice of lemon or lime. A modern <a href="http://www.foodandwine.com/recipes/portonic" target="_blank">variation</a> is to replace the slice of lemon by a slice of cucumber and 2 green grapes. In this case, you could pour some tonic water before adding the tab water to make your ice cubes. You could make 100% tonic water ice cubes but they will melt at a faster rate.</p>
<h4>Flavored waters</h4>
<p>Let the ingredients infuse the water on the fridge for at least an hour before serving. Try the mix of sliced ginger, cucumber ribbons, and mint sprigs. Martha also suggested to add lime slices, large strips of orange zest, and gently crushed rosemary sprigs to your water pitcher.</p>

One suggestion is to place your hangers in backwards after every big cleanup. Flip the hanger the other way once you worn something. After a few months, you can get rid of the clothes that are still backwards since you clearly do not want to wear them. You should do that every season.</p>
<p>Knowing what fit you well and what is in your closet that you still like can save you money. This way, when you go shopping you can look for fashion pieces that will complement or update your style. <p>Wow! I declare it the most holiday baking I have seen this year. Megan of Not Martha did it. If you can resist the urge to make your own tiny gingerbread houses that perch on the edge of your mug, hurry to Not Martha for the instructions. I like how Megan decorated each gingerbread house. Decorating the roof is enough to make a statement. I may try it with my favorite cranberry shortbread recipe.</p>

<p>It has been 6 years since I made a Christmas tree at home. But this year, I was unable to resist the urge to deck my home with a festive tree. It also meant that I needed to come up with a brand new Christmas theme.</p>
<h4>The Design</h4>
<p>The <a href="http://athome.kimvallee.com/2009/11/a-sneak-peek-at-my-christmas-ornaments/">craftsy animal ornaments</a> were my starting point. Except for the touch of red, they are neutral. I took hints from my home decor, revisited the tree ornaments I already owned to make my own version of the 2009-2010 Christmas trends. I mixed the elements of two trends: comfort and winter. It works because I analyzed what was common to both to design my own theme.</p>

<p>To repeat the blue accents on my room, I spread a dozen of night blue Christmas ball ornaments. I did the same by limiting the number of red ornaments. Everything is based on metallic colors, with gold and silver at the center stage. I also use plenty of white and clear glass ornaments. The winter trend calls for lilac, which would not go with my home decor. Therefore, I used copper instead.</p>

<p>My tree sits next to my airy staircase. Putting a pine garland on the handrail was essential to ground the tree in the space. I kept the garland bare to not compete with the tree. I simply dressed it up with an ornament on which there is a Christmas tree illustration. That is enough to make a statement.</p>
<p>I ordered a few animal ornaments and skating ornaments from Crate and Barrel. This will put the finishing touch. I cannot wait to see it complete.</p>
<h4>Being Creative with the Tree Topper</h4>

<p>It soon became obvious that the usual Holiday tree topper would look funny on my tree. For a while, I thought of leaving empty the top branch until I rediscovered my red bird ornaments. They added the touch I was looking for. The best part is that they are inexpensive ornaments that I kept over the years. I think they were the first Christmas ornaments I bought after university. I am glad I did.</p>
<h4>Things to Know to Select the right Christmas lights</h4>
<p>I upgrade to the LED lights. You have the choice between Warm white and Pure white. Think of the color of your walls before purchasing yours. Warm white lights coordinate with the warm tones of my walls. A pure white light will clash with my decor. Instead of going for my usual choice, the mini-lights, I switched to the C6 strawberry lights to compliment my theme.<br />

<p>If you avoid the traditional Thanksgiving dishes because you feel it take too much work but your family request a roasted turkey, you will be pleased to know that Gourmet found a no-fuss way to cook a golden-brown skin turkey with moist, tender white and dark meat. Simply seasoned the turkey with salt and pepper, then roasted in a 450ºF oven. In their own word, the Gourmet expert said: no need for butter under the skin, no basting, no foil tent, just blasted<!-- (recipe, page 187) -->. With the high-heat cooking method, it takes between 1 3/4 to 2 1/2 hours for a 14- to 16-pound bird. This may be enough incentive for roasting a turkey this holiday, if only making a good gravy was that simple.</p>
<p>Generally speaking, an unstuffed turkey baked quicker than a stuffed turkey. One last thing, if you ever wish to invite me for a Thanksgiving dinner or a traditional Christmas dinner, do not try to impress me with the stuffing, I do not eat it. <p>The diagonal pocket fold is not harder to make than the (square) pocket napkin fold. I prefer the diagonal pocket fold for its elegance. It is a twist on the basic silverware pouch. The difference is that you create a band instead of simply diagonally folding the top layer (step 1). I think that the band creates a more sophisticated look.</p>
<p>Before we go over the step by step instructions, let&#8217;s review a few basic rules. Any sit down dinner, even the most casual one, requires that you use cloth napkins. Ideally, you should keep around several solid and pattern cloth napkins that go well with your tablecloths. The bigger the napkins, the easiest it is to fold it. I recommend that you use 20 to 22-inch pressed napkins.</p>
<h4>How to Fold a Napkin into a Diagonal Pocket for the Silverware</h4>
<p>Step 0: Fold a square napkin in half, then into quarters. Orient the napkin so that the open corner is facing the top left side.</p>

<p>Step 1: Gradually roll up diagonally the top-most layer of napkin and press it down to form a band. I usually start rolling a band that is 3/4 of an inch and adjust as needed to get the look I want.</p>
<p>Step 2: I stop rolling when I reach about 1 inch from the lower corner. It is easier to secure the wrapped sides if you stop before reaching the corner.</p>
<p>Step3: Turn the napkin over so that the open corner is now facing your body. Fold that 1/3 of the bottom side.</p>
<p>Step 4: Fold 1/3 of the top side and tuck it in the bottom corner to secure in place. Press well. You can iron the napkins for a crisper look. I did not took the time to do it for the pictures.</p>
<p>Step 5: Use the pocket to place the silverware, a flower (with a florist vial) or a menu card.<br />

<p>Sunset magazine is a West Coast lifestyle magazine that I enjoyed reading every time I went to California. I love it so much that I became a subscriber a few months ago. The Sunset gardens are open to the public. The gardens are located at their headquarters in Northern California. I marked it down for my next trip to San Francisco since they are less than 1 hour from there. <p>This afternoon I visited Beacon Hill, an old British style, upscale neighborhood in Boston. This is one of the are where the houses are the most expensive in Boston. <p>I paid attention to find their secret. It is simple. They all display flower pots, have a stunning door knocker, hardware and street numbers. They are illuminated by a beautiful light. And more importantly, the homeowners have painted the door a contrasting color. Looking at the lack of space of these houses, it is clear that having little space is no excuse to make a statement.<br />
