Pumpkin pie is a Thanksgiving staple. To ensure everyone gets their share of dessert, try this adorable idea from Brooke Reynolds of Inchmark (she is a former art director for Martha Stewart Kids magazine).

Bake pumpkin pies in a small glass canning jars, allow to cool and top with whipped cream. Not only does it take less time than baking a pie, the miniature potted pies could also be labeled with guest names and used as placecards on your Thanksgiving table. And if your guests are pressed for time, they’ll love taking their pie “to go” so they can enjoy it at home.

Piri piri (also spelled peri peri) is an African chili pepper. You typically make a Piri Piri chicken by marinating the chicken in a hot chile pepper marinade, and then, grill it. Jamie Oliver proposes a fast and easy version that all members of the family should enjoy. The recipe is from his latest cookbook, 30-minute meals, which is currently available in UK and Canada.

He suggests to serve his piri piri chicken with a rocket salad and dressed potatoes. To complete the Portuguese theme, bake your own tarts. The Easiest Mini Apple Pie Recipe

Here is a recipe that can be handy for the upcoming Thanksgiving. Imagine that your friends and family are scheduled to to dinner in two hours and you wish to serve them a homemade dessert. Look no further than your pantry and fridge to solve your problem. As long as you stock frozen pie shells and fresh apples, you will be able to make these mini apple pies in no time. The best part is that no baking skills are necessary.

You can bake those in any individual tart pans or bakeware that go into the oven. You can use low ramekins. If you have more time, you could slice the apples instead of dicing them. The idea would be to neatly place the apple slices and make stylish open mini pies.

Earl Grey Hot Chocolate Recipe

I would like to have a sip of an Earl Grey hot chocolate. In fact, I might also try hot chocolate with other tea blends. Outstanding hot chocolates start with fine chocolate pieces and hot milk. It enhances the flavor to add  a third ingredient. I often simply add a dash of pure vanilla. I never tried it with loose teas.

The Earl Grey Hot Chocolate recipe calls for heating the loose tea and milk in a saucepan for about 10 minutes. Drain the milk with a tea strainer before you pour the tea milk onto your melted chocolate. Find the details on the blog of Fisher & Paykel. Another good mix would be a Matcha hot chocolate. These two flavors are known to pair well. Plus, you would not have to drain the tea milk. I imagine that the Lucipia matcha latte that we bought in Japan would deliver a smooth texture. You won’t have to envy me since the Lucipia stores in the United States sell the same Matcha au lait.

How to Use Truffles in Your Kitchen

I’m happy that Hivron Turanli, a foodie and the Marketing Director at Macchi Inc. has accepted to be a guest blogger on At Home with Kim Vallee. Hivron agreed to talk to us about a special ingredient that she adores. She shared with us practical tips on how to use truffles in your kitchen. Hivron is also known as Mrs. Macchi on Twitter.

People associate truffles with refined and expensive food. Many may feel that it is too expensive to use at home. I will show you that there are many ways and price levels at which you cook with truffles.

What is a Truffle?

Truffles come from the ‘Fungi’ (Fungus) family, just like the mushroom. It has the consistency and the shape of a potato or a nugget. The common definition refers to the shape of a truffle.  What makes it so desirable is its incredible and unique aroma. Plus, their seasons only last for a couple of months at a time.

There are three types of truffles:

  • Winter White Truffle (Alba Truffle) retails at $8,500 CAD/kg
  • Winter Black Truffle (Black Norcia Truffle or Black Perigord Truffle) retails at $3,500 CAD/kg
  • Black Summer Truffle retails at $1000 CAD/kg

The aromatic level and the season duration explain the price difference. The summer truffle is the least expensive since it’s the least aromatic and it has the longer season period. It stretches from mid May to September.

How Much Truffles Do You Need for 4 Portions?

The most common way to serve fresh truffle is to shave it on your dishes, like a plate of pasta or pan-fried eggs!

The more aromatic is the truffle, the less you need to put in a dish. The rule of thumbs is to cut by half the quantity if you use the pricer winter white truffle compared to the least expensive option. From my experience, a generous serving for 4 people would be:

  • 20g of Winter White Truffle,
  • 30g of Winter Black truffle and
  • 40g of Black Summer Truffles.

Preserved Truffles and Truffle Oils

But you don’t need a deep wallet to enjoy the taste of truffles. Macchi carries a variety of preserved truffles and truffle oils under our own private label Il Tartufo d’Oro.

  • Truffle Carpaccio is made from summer truffles, covered with sunflower oil in a jar. It’s great on a pizza or to elevate an egg sandwich. Serve no more than a slice per person. $50 CAD for a 120g jar
  • Truffle Paste is minced black summer truffle mixed with mushrooms, olives, and olive oil. The paste can add flavor to a white pasta sauce. You can spread a teaspoon over your BBQ steak, or make canapés for a chic cocktail party! $20$ CAD for a 180g jar
  • Truffle Oil Black or White has no real truffles in it! It is simply an extra virgin olive oil infused with truffle essence. I use it at least 3 times per week in my cooking. The white one is slightly sweeter in flavor and the black tastes earthier. I put a dash into my Bolognese sauce, drizzle some over a fried egg or a steamed artichoke. $25-$30 CAD for a 250 ml bottle.

As you can see there are a lot of options for enjoying truffle and adding it to the ingredients you use in your cooking.

My Call for Less Salt in Processed Food and Restaurant Food

Salt may not have calories but eating too much sodium can lead to premature deaths due to heart diseases and strokes. In North America, we eat on average twice the recommended daily intake (1,500 mg). Something has to be done. It is relatively easy to cook with less salt at home, if you make a lot of thing from scratch. But what about processed food and food that you eat at the restaurant? We have no control over that.

I am happy to report that more food companies in the United States decided last Spring to join the voluntary cutbacks of salt in their products. On average, 75% to 80% of the daily salt intake of an American citizen comes from processed or restaurant food.

In Canada, a panel chaired by Health Canada aims to reduce our Canadian daily intake from 3,400 mg to 2,400 mg by 2016. But I find it strange that their recommendations do not bring down to 2,300 mg since it is considered the upper limit for an adult.

What can you do at the grocery store?

Over the last 3 to 4 months, I started to check the sodium on all the canned and processed food I buy at the grocery. Be careful, when you buy canned tomatoes or vegetables. Most of them have added salt. For example, Del Monte Whole Green Beans have 380 mg of sodium per 1/2 cup. The same is true for peanut butter, even the organic kind. President’s Choice Blue Menu produces a low sodium collection. In the meantime, read the label before buying and encourage brands with low sodium content.

Let’s hope they will be wise

As a cook, I can tell you that it is to take the easy road put large amount of salt to create flavor in a dish. I do not cook with very little salt and my food is very tasty. I hope that food companies will make more healthy choices than with the fight against fat. The low fat yogurt many not have fat but it is filled with sugar and still have the same amount of calories. But for that to happen, they will have to accept the fact to create completely new recipes.
