    I will definitely make the lemon ice cream but will try a different type of cookie, as I don’t want to use shortening. Last week-end, I had an ice cream sandwich at Itsy Bitsi and she used slices of cupcakes instead of cookies. It was delicious.

  2. I was seduced by the pictures and did not pay attention to all the ingredients. Thank you for pointing the shortening Nathalie. I may try with butter only.
    Otherwise, I have many great cookie recipes at home. In fact, most of the time it is Jerome, my husband, who bakes the cookies.

  3. Shortening actually has less saturated fat then butter. And one can find all vegetable shortening nowadays pretty easily.
